Grain Free Almond Waffles

OMG, you guys I love these waffles. Josh and I have them as snacks and more recently for lunch. They are so delish. It is unreal. Especially for us because we have been grain free for the most part for awhile now.

I have to thank Jora for alerting me the the goodness and Jessica from jessicapeppler.com for the recipe. It is a winner for sure. I have added a little (tiny, mini) twist to it by adding cardamon. I would like to experiment with savory stuff like green onions.

They are pack full of protein and really fill you up. Most of the time Josh and I just have ghee and maple syrup, but you could go wild with these.

P.S. They cook super fast on my grill (30-40 seconds) and my grill is pretty well seasoned so I don’t have to oil it, but I thought I would give you all a heads up if yours isn’t seasoned, brush some coconut oil on it.

GRAIN FREE ALMOND FLOUR WAFFLES (makes 2.5 full-size Belgian waffles)
1 cup of blanched almond flour
1/4 teaspoon of salt
1/4 teaspoon of baking soda
1/8 teaspoon of cinnamon (optional)
1/4 t of cardamon (also optional)
4 eggs
1 teaspoon of vanilla
1 tablespoon of honey
1 tablespoon of coconut oil or ghee

TO MAKE
Preheat your waffle iron. Whisk together the dry ingredients and then add the wet ingredients in the order listed. Whisk thoroughly so that the batter is uniform.

    I'll definitely give these a shot. I tried some grain free waffles recently but they were very thin and fell apart easily.
