I know I’ve been MIA, but I’m sure it hasn’t effected you all much. I’ve been busy as usual. I actually hate telling people that I’m busy. It usually means that I’m a bit frantic and I am not at all sure of how I’ve been spending my time.
- Indian Spiced Potato Chip Sticks. Baked, not Fried. By Veggie Belly.
- Grilled Balsamic-Garlic Crusted Pork Tenderloins. By KitchenConfidante.
- Sausage, Chard, and Lemon Lasagna. By Martha Stewart.
- Egg Sandwich with Spinach, Brie and Maple Bacon. By Framed Cook.
The Balsamic-Garlic I put on chicken and portabella mushrooms and loved it. I also made the Indonesian Pork Tenderloin from Kitchen Confidante. I used chicken sausage and fresh pasta from Assenti’s for the lasagna. I also switched out the chard for dark kale.
Josh hates chard, so I switched to the negro kale because it’s more mild. He asked me what I was making and I told him lasagna. When I took it out of the oven he exclaimed ” that’s white, you can’t call that lasagna.” He got over it, but it may be a little bit before I can make it again.
I’m trying to build up the nerve to attempt the whole fish. I’ve tried it before and failed, but that was a few years ago.
